We had visitors staying with us last weekend, and so I thought I might try to make a few quiches to feed everyone up, and to be handy snacks for late night nibbles, or next day lunches.

I also thought quiches might make good use of a few of my home grown veggies. I combined what I liked the look of, from a couple of different quiche recipes, to make: a spinach, ricotta and bacon quiche: and a swiss chard, chedder and bacon quiche. (”Even more bacon next time! ” The Dozer said. Cheeky fella that he is)

In the photos above you can see the Swiss chard in my garden, my neighbour’s eggs and my veggies on my kitchen bench, and the resulting dish. It smelt so delicious as it was cooking, and attracted much interest in my house. So much so, that the picture above shows what happened between the time I took it out to cool, and when I came back to inspect the finished result… someone had already tucked in! Which I take to be a great compliment.

I’m new to growing swiss chard, and have found it has a yucky bitter taste. So I was concerned about adding too much of it to the recipe, and it overpowering the dish with its flavour. But it turned fine, and I’d even add more in the future.

I wanted to add a picture of my lovely (egg supplying) neighbours’ cute chickens, but I don’t have a picture of them to include. So I put up Herme, their beautiful horse (I use to be sure he was called Perme… but now it sounds more like Herme, I’m confused! ). Eitherway, he’s lovely too. He’s like an enormous dog. He leans on them, wanting a good scratch, and follows them around the yard. It’s such a sight – my beautiful flame haired neighbour, with a giant horse: two dogs: a gaggle of geese, and Mr Jinx the Cat; all trailing along behind her. It’s so sweet. And they’re the best neighbours.
