We had visitors staying with us last weekend, and so I thought I might try to make a few quiches to feed everyone up, and to be handy snacks for late night nibbles, or next day lunches.
I also thought quiches might make good use of a few of my home grown veggies. I combined what I liked the look of, from a couple of different quiche recipes, to make: a spinach, ricotta and bacon quiche: and a swiss chard, chedder and bacon quiche. (”Even more bacon next time! ” The Dozer said. Cheeky fella that he is)
In the photos above you can see the Swiss chard in my garden, my neighbour’s eggs and my veggies on my kitchen bench, and the resulting dish. It smelt so delicious as it was cooking, and attracted much interest in my house. So much so, that the picture above shows what happened between the time I took it out to cool, and when I came back to inspect the finished result… someone had already tucked in! Which I take to be a great compliment.
I’m new to growing swiss chard, and have found it has a yucky bitter taste. So I was concerned about adding too much of it to the recipe, and it overpowering the dish with its flavour. But it turned fine, and I’d even add more in the future.
I wanted to add a picture of my lovely (egg supplying) neighbours’ cute chickens, but I don’t have a picture of them to include. So I put up Herme, their beautiful horse (I use to be sure he was called Perme… but now it sounds more like Herme, I’m confused! ). Eitherway, he’s lovely too. He’s like an enormous dog. He leans on them, wanting a good scratch, and follows them around the yard. It’s such a sight – my beautiful flame haired neighbour, with a giant horse: two dogs: a gaggle of geese, and Mr Jinx the Cat; all trailing along behind her. It’s so sweet. And they’re the best neighbours.

That horse has the longest nose!!! Sweet!
I love pretty much all veggies, except asparagus (I know, I know …) and artichokes .. but I’m beginning to add all bitter leaves to that. I can’t eat a salad with endive or radicchio in it. Yuck. Spoils the whole thing! I’m glad you found a recipe to use that stuff in and make it palatable!

Don't Bug Me!
I love quiche and I love bacon – you can never have too much bacon, can you? Swiss chard, perhaps, but not bacon.
Your neighbours sound wonderful. I am of the opinion that if you can’t have what you want, go and find someone who has it and share theirs. So, I have to run around stroking and fussing other people’s dogs. Horses are a bit harder to find, but when I do………

Yum. That quiche looks absolutely gorgeous. We’ve got neighbours (heh!) with horses and the guy, J, is always offering me a free lesson. Trouble is I’m a bit scared – well, they’re bloody huge aren’t they!
Our neighbours are lovely, as you know. I wouldn’t be without D, Little C and Lou, and the kids would be bereft – sounds like you fell on your feet too xx

Jay, hasn’t he ever? I couldn’t fit his whole head in the picture.. I ended up with lots of his nose! Ha ha ha. I like asparagus and artichokes, but I’m with you on the bitter leaves. … Doesn’t asparagus make your pee yellow? Or green.. or smell funny. I think it does something!
Bugs, I wish you could have seen last night’s episode of the Aussie tv show “Farmer wants a wife”. This woman asked if she could bring her two horses to the man’s property, if they found each other attractive: he shot her down in flames by nastily saying that if she wants horses she can buy her own 20 acres and do whatever the beep, beep, she wants with it. I think it was the end of their romance.
I love the sound of your wonderful neighbours English Mum. Great neighbours make all the difference, in being about the enjoy living where we do. Big? Horses are even bigger when you’re up on their back. Scary and exhilarating; my neighbours also offer to let me ride Herme, but I need to work on my thigh muscles before I want to get up on that (ex-racehorse) enormous gentle beast.
